Orange Cricket Chocolate Chip Cookies

Dry Ingredients:

  • 5 g all-purpose flour
  • 14 g cricket flour
  • 3 g baking powder
  • 0.5 g salt

Sugars, fats, and flavor:

  • 55 g brown sugar (packed)
  • 25 g white sugar
  • 38 g unsalted butter, softened
  • 1.5 g orange zest
  • 1.25 g vanilla extract
  • 25 g beaten egg (½ large egg)

Mix-ins:

  • 45 g semisweet chocolate chips

Moisture adjustment:

  • 5–10 g orange juice

Instructions:

  1. Preheat oven to 350 °F. Line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together the all-purpose flour, cricket flour, baking powder, and salt until fully combined. Set aside.
  3. In a separate bowl, cream the butter, brown sugar, and white sugar together until light and fluffy, about 2–3 minutes.
  4. Add the orange zest, vanilla extract, and beaten egg, mixing until fully emulsified and smooth.
  5. Add the dry ingredients to the wet ingredients and mix just until combined.
  6. Stir in 5 g orange juice. If the dough appears crumbly or dry, add additional orange juice 1–2 g at a time until the dough is soft and cohesive.
  7. Fold in the chocolate chips.
  8. Scoop dough, spacing cookies about 2 in apart. Gently flatten each mound slightly.
  9. Bake for 13–15 minutes, until edges are lightly golden and centers look just set.
  10. Cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
